The fruit for this 2018 Limited Release Verdelho, was handpicked to ensure it retained freshness and had no split berries at the time of processing. The grapes came in quite ripe at 25 Brix, the skins were a little soft but had outstanding flavor. The fruit was processed first thing in the morning through the new Diemme Velvet 80 Press utilizing the N2 inert gas system. This new press ensures that little to no oxygen comes in contact with the juice which is very important and results in brighter, fresher wine. Hard pressings were included with the free-run to add textural depth to the finished product.
On the palate, this 2018 Verdelho has bright citrus and mineral notes with balanced acidity adding structure to the wine. Pair it with herb-roasted chicken and creamy rich dishes like white cheddar mac n cheese with pancetta.
