
2017 Broken Earth Vineyard Select Zinfandel
This wine has the “Vineyard Select” designation, meaning the fruit was sourced from other vineyards than our own “Estate” property The fruit was harvested by hand and was quite ripe at 25 6 Brix, very typical of Paso “Zin” Grapes were in excellent condition when received at the winery Untoasted French oak fermentation ‘rice’ was added to assist in color and flavor extraction.
The must was then inoculated using “Clos” yeast, the resulting ferment being held at 62-64F. The ferment was completed after 19 days Each fermenter received 2 ‘pump-overs’ each day, a process that circulates the fermenting juice over the skins to ensure complete extraction of sugars and anthocyanins. The fermented grapes were pressed off skins and the wine left to settle.
The oak program for this wine was the use of new “Hybrid” barrels, having French oak heads and American Oak staves. This is a very forward, fruit driven wine and the new oak was used to balance out the wine’s weight. The maturation time was 22 months prior to bottling in April 2019.
