2018 Limited Release Vermentino
The Vertical Shoot Positioning (VSP) trellis system in our vineyard offers excellent shading to lessen the chance of sunburn on our Vermentino fruit The row direction from east to west aids this as well The fruit was handpicked to ensure it retains freshness (no split berries) The grapes were processed first thing in the morning through the new Diemme Velvet 80 Press utilizing the N2 inert gas system; this press ensures that little to no oxygen comes in contact with the juice, resulting in brighter, fresher product.
The juice was chilled to 34F and settled for 4 days before racking Fermentation was complete after 26 days and the ferment temperature was maintained at 54F, the cool temperature helps retain the more subtle aromas and flavors of the wine.
Floral aromas of honey blossom and roses, with the palate combined with soft sweet melon notes along with lemon and citrus hints. Pair with seared swordfish, calamari, or grilled eggplant and mushrooms.
